The Naked Chocolate Fruit Cake
This one of the easiest cakes to make because it doesn't require a lot of effort. There is no cake icing needed. And there is a lot less sugar compared to an iced cake. The combination of fruits is great because it can be 1 of your 5 a day. This is the recipe for the "Naked Chocolate Fruit Cake"
INGREDIENTS (For 1 Tier):
3 Eggs
80g Sugar
1 Tablespoon milk
20g Melted butter
95g Cake flour
20g Cocoa Powder
1 Teaspoon Vanilla Extract
Double Cream
Icing Sugar
Fruits
Chocolate
INSTRUCTIONS:
1. Beat your eggs until fluffy and your sugar, keep whisking for about 3mins until smooth.
2. Add your milk to the butter and melt your butter. Add it to the sugar mixture.
3. Sift your flour into the egg mixture and mix until well blended.
4. Repeat the same step for 2 Tiers of cake and then for the 3rd Tier add your cocoa powder and bake at 180 degrees for 20 - 30mins.
5. In a seperate bowl. pour your double cream and whisk until thick and add your icing sugar and vanilla extract.
6. Add any fruits of your choice to the cake. Melt your chocolate and add 1/3 cup of milk and mix, pour on top of the fruits and cake.
