Jollof Rice

Rice is one of the most common dish all over the world, cooked differently. Jollof rice is an African dish, originally from Ghana and Nigeria. A not so complicated dish. we like to play around it, adding spicies, mixing a thing or two, adding God knows what to the rice but anyway whatever we add is what makes the dish to be the best it can be. So here is my recipe for Jollof Rice.

INGREDIENTS:

Rice

Tomatoe Puree

Paprika

Bay leaves

Chicken Stock

Red pepper

Spring onion/Onions

Garlic

Tomatoes

Parsley

Curry Powder

INSTRUCTIONS:

1. Heat your pot with any cooking oil of your choice and add your chopped garlic, spring onion, red pepper and cook until the onions are almost golden brown.

2. Add your tomatoes to the first mixture until the tomatoes are soft and add your tomatoe puree, spices (paprika, curry powder, parsley and ginger) and let everything cook for about 2 - 3 mins and then add your Rice and Chicken stock.

3. For chicken stock you can just boil the your chicken and then save the stock that is left and add that to your rice, or you can just buy any chicken powder and add water to it

4. Now that you have cooked everything, lastly add your bay leaves on top of your rice and let the rice cook/simmer on low heat for about 15 - 20mins (I always cover my rice with foil, instead of using the actual lid because i feel like it makes a difference. If the rice is still a bit grainy just add a bit of water until cooked properly.

5. Voila! There goes your jollof rice
